Hospitality Technologies

Culinary Arts Technology (CUL)

In the Culinary Arts Technology program at Cincinnati State, students receive training in all aspects of food preparation, including methods of cookery, sauces, soups, butchery, garde manger, pastry, and confectioneries, in addition to culinary management. Graduates earn an Associate of Applied Business degree.

Graduates are prepared to:

  • Work in hotels, restaurants, clubs, resorts, catering, and health care food service operations

Graduates of the Culinary Arts program at Cincinnati State have excellent opportunities for employment. According to the National Restaurant Association, the restaurant industry employs an estimated 12.8 million people, making it the nation’s largest employer outside of government. It provides work for more than nine percent of those employed in the United States, and is expected to add two million jobs over the next decade, for total employment of 14.8 million in 2017.

Culinary Arts Certificate

The Culinary Arts certificate provides a combination of courses in food preparation and culinary management. This one-year program includes courses required for individual certification with the American Culinary Federation.

Personal Chef Certificate (PCC)

Being a personal chef is nothing new. There have always been those who have cooked and prepared meals for private clients. Having a meal service has become affordable not only to the rich and famous, but to ordinary clients as well. Clients include, but are not limited to, those unable to prepare meals for themselves in their homes due to physical problems, those needing special diets due to health concerns, or even those who want to purchase services as presents to loved ones for such holidays as Sweetest Day and Valentine’s Day, anniversaries, and birthdays.

The Personal Chef certificate program provides culinary and non-culinary training in small business management, nutrition, and healthy cooking techniques. Upon completion, students will be eligible for certification through the American Culinary Federation and be qualified to operate individual businesses as personal chefs to a varied client base.

Graduates are prepared to:

  • Operate as in-home personal chefs for hire to clients
  • Provide on-site small event catering service
  • Prepare and package meals for specified, weekly meal plans
  • Work with clients to provide individualized meal plans for special dietary needs

Credentialing
After successfully completing the certificate program, and operating a personal chef service for a minimum of one year, students are eligible to apply for certification through the American Culinary Federation.

Hospitality Management Technology UC (HOSPUC)

In the Hospitality Management Technology program at Cincinnati State, students learn basic lodging and restaurant operation skills and progress to hospitality management training through classroom instruction, laboratory experience, and cooperative education. Graduates earn an Associate of Applied Business degree and are prepared for supervisory positions in a variety of hospitality venues including hotels, restaurants, clubs, and catering companies.

  • Manage and supervise multiple hospitality venues including: hotels, casinos, restaurants, and catering companies

Pastry Arts Technology (PAS)

The Pastry Arts Technology program at Cincinnati State prepares students for employment in the culinary industry as pastry chefs or as bakers in the field of baking and flour confectionery. The courses include technical aspects of baking and pastry commonly used in the industry, such as preparing yeast dough; producing cakes, cookies, and cold desserts; and constructing pastry centerpieces. Graduates earn an Associate of Applied Business degree.

Graduates are prepared to:

  • Work in hotels, restaurants, bakeries, pastry shops, and other food service operations that require the services of a baking or pastry professional

Pastry Arts Certificate (PASC)

The Pastry Arts certificate program provides a basic introduction to the baking pastry production field. This one-year evening program includes instruction in various methods of pastry production used in the food service industry. This certificate program meshes with the Pastry Arts degree program, allowing students to apply earned credit toward obtaining an associate’s degree.

Dietetic Technician (DT)

Dietetic technicians are trained in food and nutrition and are an integral part of health care and food service management teams. They promote optimal health through proper nutrition by providing personalized services to meet clients’ nutritional needs, and are trained to supervise people who prepare and serve food. Dietetic technicians work independently or in teams with registered dietitians in a variety of employment settings, including hospitals, nursing care centers, retirement centers, schools, food companies, and community health programs.

Students are required to complete 463 hours of directed practice and practicum during the program. Students are also required to complete an additional 55 hours, to include co-op modules, professional meetings, wellness and program support.

Graduates are prepared to:

  • Counsel clients and families on specific diets and design specialized meal plans
  • Document client care
  • Develop, implement, and review nutrition care plans
  • Develop recipes and design menus
  • Ensure quality and safety of food service
  • Monitor budget and inventory
  • Monitor food quality and meal acceptance
  • Participate in assessing client’s nutritional status
  • Supervise food production
  • Teach nutrition classes

Dietary Management Certificate (DMC)

Dietary managers work in teams with registered dietitians and are an integral part of health care and food service management teams.

The Dietary Management certificate program provides courses in food service management, nutrition, sanitation, and human resources. Students are required to complete 216 hours of directed practice and practicum during the program. Students are also required to complete an additional 14 hours, to include co-op modules, professional meetings, wellness and support programs.

Graduates are prepared to:

  • Work in long term care, hospital, schools, and noncommercial food service settings in a management position

Nutrition Science Technology (NS)

The Nutrition Science Technology program provides students with basic coursework that enables them to transfer to the University of Cincinnati baccalaureate programs in Food and Nutrition with an emphasis in business, exercise, or pre-medicine. Students will also have an opportunity to apply for the Coordinated Program in Dietetics when they have completed all but 54 hours at UC. The program also allows students to transfer into the Bachelor of Science in Dietetics program at UC. Emphasis is on completion of general education, science, and basic nutrition requirements to prepare students for work in their major at a four-year institution. The primary objective of this program is to provide for transfer to the University of Cincinnati, rather than preparation for a job. Students must work closely with their academic advisor from Cincinnati State.
